For this EB-2 NIW case, we worked closely with a Postdoctoral Researcher in the field of Food Science. In his research endeavors, our client has developed novel nanoemulsions and lipid technology, which have great implications for food production and public health. The mass production of food has caused a decrease in nutritional quality and an increase in dietary fats, putting consumers at a high risk for obesity. Our client has characterized alternative lipid sources for emulsification into food and beverage products to create functional foods. His work has made great strides towards improving the nutritional benefits of processed foods, which has ramifications for the food processing industry as well as public health. These publications have been cited 32 times by independent researchers worldwide, and the demand for his research has resulted in numerous invitations to present his work at highly distinguished international conferences, demonstrating the global recognition of his endeavors.
